Weekly Meal Plan 3/4-3/10




Recap of the week- 
Sweet Potato Pancakes with Blueberry Sauce were a success!
Hash Brown Waffles- not so much, but I think it was me- I will try again and make sure I reeeeally finely shred my potatoes.

Went to lunch at BreadWinner Cafe in Sandy Springs with my neighbor/friend and it was great. She took me there because she thought the food would be up my alley and she was right.


I had the celery/spinach soup- not my fave but good. Quinoa salad and brussel sprouts with parmesan cheese! Yum. 

On to the meal plan! Ben is traveling this week so I won't need to cook as much but I still like cooking some meals because I do get tired of just throwing things together- I want a MEAL meal if you know what I mean. 

Saturday-

My sister/best friend, Maria, is coming to visit!!!!!!! So, I will have lunch ready for her and we will go out to dinner to Ponce City Market that night I think- woot woot. I love that place. 
Here is what I am doing for lunch- it.is.easy. This recipe was passed on by a good friend, Julie, that we knew in Orlando, FL. We have used it for years now!

Flank Steak - 
Marinade: 
1-3 T. sesame seeds
1/4 c. salad oil 
1/2 c. soy sauce
2 cloves garlic, crushed
1/2 t. pepper
1/2 t. ginger (scant) 
1/2 c. brown sugar (I will honey instead sometimes) 
2 green onions sliced (I don't always have these on hand and it is fine without them I think!) 

Place steak in a glass dish. Pour on marinade and let stand overnight in refrigerator- flip occasionally- 
Broil or BBQ 5. min each side- 

I typically marinate this for 24 hours if I can- but if you can't and it just marinates during the day- I think it is still really good!
Will serve with roasted potatoes and a salad...

Sunday- 

Making this easy  Potato and Sausage Hash that I posted about earlier this week- 

Monday- 

Going to try this new one out from one of my favorite blogs I check for new ideas/recipes- hopefully it is as good as the picture looks!

Serving with rice pilaf (I will post that recipe soon) and some roasted veggie. 

Tuesday- 

Because Ben will be gone and because it is kids eat free night and because we have our small group, we are heading to Taqueria Tsunami for dinner this night. If you haven't gone, my favorite is their guacamole and yucca fries.  Luke looooves the yucca fries. I am going to learn how to make these one day! 

Wednesday- 

So, I have buckwheat flour and I thought I would give this a try- 
I think I am going to make them and then make them "Monte Cristo" style- with ham, cheese and dijon mustard inside OR slather some nut butter/jelly on them as well : ) Make it your own!

Thursday- 

Slow Cooker Braised Pork Shoulder- from Against All Grain by Danielle Walker
She actually doesn't have this recipe online, so I don't think I am allowed to reproduce it here- so buy her cookbook, IT IS WORTH IT! 
 
I like her so much that my good friend Jenni and I went to a book signing at the CUTEST bookstore in Woodstock, Ga in October 2014. If you are really interested, I can email you the recipe : ) OR I can just invite you over for dinner!

  1. The sister here...I can attest to the flank stank being amazing and satisfying. Every time I visit the fam... I get inspired to cook more healthy (is that correct grammer?)
