Meal plan for 1/22-1/28

We had a guest this weekend- my sister's friend was here for a conference so we were Airbnb -always fun to have a guest! Plus an interesting one at that. She is planning on going into mission work full-time to Gambia- I surely didn't know where this was, so I (and our family) learned more about the world this weekend!
So I had to meal plan a little earlier than normal to be prepared- here is the meal plan from last Friday to this coming Thursday...Ben is going to be out of town this week so I am planning on freezing some of the meals that we won't finish to create some quick meals to grab at a later time.

Friday- Sweet and Spicy Pork Shoulder with Cucumbers
              also some oven-roasted carrots

Saturday- For breakfast- Blueberry Paleo Muffins, (I used frozen instead of fresh blueberries) along                  with bacon and fruit
                 Alison (our guest) treated our whole family to dinner at Thaicoon- sushi, panang,                                  edamame, etc...delish

Sunday- Leftovers from the sweet and spicy pork- I try to not cook on Sunday if I don't have to!

Monday- Pioneer Woman's Chickpea Curry
                

Tuesday- Taking a meal to my friend, who just had a baby- will double up on this recipe for
                 as well - Shortcut Spaghetti with Meat Sauce
                 This recipe is from my All Against Grain cookbook- Danielle Walker
                 Ingredients-
                 2 tsp ghee or extra virgin olive oil (I get my ghee at Trader Joes)
                 4 cloves garlic, minced                                  2 pounds ground beef
                 1 tbsp Italian seasoning                                 1 tbsp dried parsley
                 2 tsp onion powder                                        1 1/2 tsp sea salt
                 1/2 tsp cracked black pepper                         1/2 tsp crushed red pepper
                 5 cups spaghetti sauce (either store bought or make your own)
                 Pasta of choice (I will use spaghetti squash for my noodles sometimes!)
                 Directions- 
                 1.  Heat the ghee in a saucepan over medium-high heat. Saute the garlic for 1 minute, until
                      fragrant. Add the beef and seasonings, reduce the heat to medium, and cook for 10
                      minutes, until the beef is cooked through. Drain any grease.
                2.   Pour in the spaghetti sauce and simmer for 10 minutes. Serve over pasta or pasta
                      substitute of your choice.

Wednesday- Tacos! - make it your own-
                      *ground beef seasoned with chili powder, cumin and salt
                      *simple guac
                      *salsa verde
                      *cheese, tortilla chips, lettuce, black olives- whatever you have that you like to add

Thursday- Asian Stuffed Napa Cabbage Rolls
                   

Bonus meal : ) Having a friend over for lunch on Tuesday and will make this - this is a winner for sure! Arugula Cremini Quiche with almond meal crust
