Turkey Tortilla Verde with Yogurt, Lime, and Honey drizzle


A NEW RECIPE! 
Tonight, I thought I would get creative and it turned out pretty well. It was kid-approved and me-approved. Ben is out of town for work, so still pending a verdict from him. 

Turkey Tortilla Verde with Yogurt, Lime, and Honey Drizzle

Total time start to finish: 40 minutes
Serves 4- so you may want to double it with bigger families.

Ingredients:

jar of salsa verde (I am obsessed with the salsa verde from Trader Joes)
1 lb. ground turkey
1 tsp. cumin
pinch of salt
1 cup of cotija cheese (or any cheese you would like really)
corn tortillas
1/4 cup plain yogurt
1 tbsp lime juice (about the amount from 1/2 a lime)
1 tsp honey
cilantro, avocado, or anything else you would want to top it with

Directions: 
Preheat oven to 375 degrees. 
Empty jar of salsa verde in a blender to "puree" it.  Unless you like chunks and you can leave it as is. Heat a large skillet over medium heat. Add turkey and brown until cooked through.  Add 1 tsp cumin and pinch of salt and combine.  Add 1/4 cup salsa verde, stir and simmer for about 5 minutes.  

Assembly:
Cut corn tortillas into strips.  (I used a pizza cutter)  Use an 8x8 glass baking dish and spread about 2 tbsp of salsa verde on the bottom of the dish.  Cover the salsa with tortilla strips- I just put enough to cover and make a layer.  Next, place 1/3 of the ground turkey mixture over the corn tortillas.  Then, ladle about 1/4 cup of salsa verde and then 1/3 cup of the cotija cheese.  I did three layers ending with cotija cheese on top.  Cover with greased foil and bake for 20-30 minutes until everything is bubbly and melted.  You may want to remove the foil about 5 minutes before you pull it out of the oven to brown the top.  
Mix yogurt, lime juice and honey (adjust either way if you like it more tart or sweet) and drizzle on top.  
P.S. You will probably have some leftover salsa verde- save for something else!

I served it to the kids with some apples.  All of their feedback was positive! Eve wasn't down with the "drizzle" but that is fine.
