Slow Cooker Meals

I am gone with my kids this week in Orlando, FL soooo no need for weekly meal planning since Ben is just throwing things together to eat at home.  I stocked up for him and he should be doing well.  
Instead, I thought I would pop in and post some go-to slow cooker meals. Have a great week! 


So I literally make this one every other week- I use it for tacos, or just as a main dish or stick it in sandwiches...anything! My modifications: 
I don't use the jalapeno and I don't put it in the skillet at the end. Maybe I should but I do the slow cooker for the "ease" of it and I don't want to get another dish dirty or have another step. 
Pork Carnitas

Slow Cooker Balsamic Chicken 
I have used this recipe for so long, I honestly can't remember where I got it from but here you go.

Ingredients
Instructions
  1. Combine basil, salt, pepper, onion powder and sprinkle over the chicken
  2. Add coconut oil and minced garlic, onions to the bottom of the crock pot.
  3. Place chicken on the top
  4. Pour balsamic vinegar over the chicken and add rosemary.
  5. Cover and cook on high for 4 hours.
  6. Enjoy!


This is my current fave-when I like something and it is easy, I make it over and over and over...you get the picture : ) I serve with cut up avocado for the top- typically just put cheese on the kids, and tortilla chips go with everything, right? 


This is so flavorful - anything with coconut milk, curry paste and fish sauce (<don't let that deter you : )- I am not a huge fan of the texture of jicama, so I just add more carrots and other veggies.

And last but not least for this post, is a BBQ Chicken recipe- I have used this one over and over and it never gets old. 


We are having so much fun being with friends! But we miss Ben and Georgia for sure. These pics below are from a date night before we left. Our sweet friends offered to watch the kids and we headed to La Carreta- (in Marietta). Our fun friends introduced us to it awhile ago and it was so good. Started with margaritas and then I had two grilled tilapia tacos and one carnita taco. Fun food and conversation- our date night did include a stop at Home Depot to look at possible new grills.  Real life!

    1. Haha! I know, I feel like I am betraying you! It was Ben's suggestion : ) I think he thought they were on sale there? That is my excuse anyhow.
