Lamb Meatballs + Spiced Curried Rice



Ingredients:
Meatballs-
1 pound ground lamb
2 garlic cloves- minced or pressed
1/2 tsp. cinnamon
1/2 tbsp. cumin

Rice- 
1 cup white rice- rinsed and drained
1/2 onion-diced
1 tbsp. butter/ghee
1/2 tsp. cinnamon (or 1/4 tsp. depending on how much "sweet" you like)
1/2 tsp. turmeric
1 tbsp. curry powder
1/2 cup raisins
1 tsp. salt
2 cups water

Directions:
Preheat oven to 375 degrees.  

Heat butter in a pan/skillet over medium heat.  Add onion and cook about 2-3 minutes- for onions to soften.  Add rice, raisins, and all spices to onions and stir thoroughly.  Add 2 cups water and salt.  Stir. Bring water to a boil.  Reduce heat to low to simmer for about 20 minutes until rice is cooked through.  

While rice is cooking, place ground lamb, garlic, cinnamon, cumin and salt to taste in a bowl. Mix with hands.  Divide into golf sized meatballs.  Place on a baking sheet and bake in the oven for about 15 minutes or until cooked through. 




Enjoy!  My kids loved this one and fairly easy to get on the table in about 30 minutes!
