Snack Prep + Meals

If I am on my "A-game" then ideally I snack prep on Mondays for our week.  The kids love granola for breakfast so that is usually made most weeks and then some other pack + go snack...which this week was homemade Larabars.

Small Batch Granola

- I really play with the recipe- add in whatever nut/seed you like, I usually leave out the coconut and use raisins just mixed in-

Dark Chocolate Cashew "Larabars"
about 1 1/2 cups Medjool dates, pitted
about 2/3 cups raw cashews
2 ounces dark chocolate, roughly chopped
1 tablespoon water 

In a food processor, combine dates, cashews & chocolate and pulse until the mixture is combined and very finely chopped - about 2 minutes.  If the mixture has not come together on its own, slowly add in the water - only as much as needed to get the mixture to bind together just a little.

Empty the processor bowl & press mixture out onto a piece of wax paper. Cover with another piece of wax paper and roll out to desired thickness. Cover and refrigerate for 2 hours (or freeze for 30 minutes). Once chilled, cut bars and wrap individually.




So, they aren't quite as pretty as the store-bought ones, but they work!

This one is fantastic! Her blog is vegan and my hubby likes some protein in his soup, so I added chicken during the cooking process.  I added the turmeric for sure, because it is that time of year for sickness.  I served it over brown rice ramen noodles BUT I roasted some butternut squash and actually just ate mine over squash because if I could eat one veggie every single day it would be butternut squash...



For the Super Bowl - I was all in. I mean all in.  I don't usually stress about NFL games because I love my college football. I like watching NFL because I just like to watch football and not worry about the NFL teams.  WELL, I got obsessed with the Falcons this year- and so did Luke- we were sad people last night.  Anywho, THE FOOD.  We'll talk about the best part of the Super Bowl.  
When I know I need some solid/hearty/reliable recipes, I head to the Pioneer Woman website.  

We will totally be adding the Sloppy Joes  to our rotation.  The kids loved them! 


So I realized I didn't have marinara sauce too late, so they just became potato skins with pepperoni and mozzarella- still were good! 


Last but not least-Queso Fundido
This didn't get as melty as I wanted BUT listen, sausage, cheese, sauteed veggies- it was still good!

Have made these before and they are a hit! I will use a lettuce wrap for mine a lot of times.  

Will serve with frozen french fries- yes, I mean dinner needs to be quick and easy sometimes!

There you have it---

New place we tried in Marietta- La Cubana- Went with Ben and the kids Friday night and we all liked it. We definitely want to try it again and try some different foods but kid- approved, which is necessary! 

I slacked on pictures of the other meals, but I got yucca fries with pork, cilantro and onion on top!

And this is a picture to start your week off - it is dreary here and Eve comes running downstairs dressed like this.  A friend said it and I can't remember who, but little girls dress tacky.  Yes and I love it!
